Frivolity of Venison

Recipe for the frivolity of venison and tomato passata croute, two bite canapé:

Shallow fry all the diced and sliced ingredients with the garlic and olive oil.
Add the herbs before adding the tomatoes.
Cook out until the mix looks dry enough to hold upon the croutons.

Venison loin:

Seal the venison loin in olive oil and seasoning.
Bake in the oven for 4 – 5 minutes until pink.
Test with a temperature probe and rare / pink will be around 57˚C.
Cook to your taste.
Allow to rest be­fore carving.
Layer up using the crouton then the passata and venison.


1 ciabatta sliced thin and bake with olive oil and seasoning

Ragout of mediterranean vegetables:

3 tbsp olive oil
1 medium onion, chopped
3 cloves garlic, crushed
1 red pepper, small dice
1 green pepper, small dice
2 large courgette, small dice
6 button mushrooms sliced
1 carrot, small dice
1 can diced plum tomatoes, mostly drained
1 tbsp oregano
1 tbsp basil
salt and pepper to taste
